Convotherm Recipes
This is what summer tastes like!
When the temperatures rise, light and healthy cuisine is in demand. Welbilt offers chefs a wide range of inspiration.
The meteorologists agree: this summer will be hot and dry again. The desire for light dishes such as salads, soups, vegetables, pasta, poultry and fish is growing. In line with current food trends, there are many opportunities for restaurateurs to spoil their guests with original and creative dishes.
Here, too, vegetarian and vegan cuisine scores highly, with plant-based recipes that can be enjoyed with a clear conscience from a climate point of view, especially on hot days. No wonder more and more people are opting for a diet with less or no meat or animal ingredients.
In addition, in summer local agriculture offers a wide variety of seasonal fruit and vegetables that are produced in a resource-friendly way, are not transported far and are beautifully presented on the plate. Fresh salads, grilled vegetables and plant-based burgers are popular at barbecues, light lunches or with a sophisticated glass of rosé in the evening.
From the field to the plate
This is why more and more restaurateurs are turning to the so-called farm-to-table concept, and not just at the height of the harvest season, where the origin of the ingredients sourced directly from farms in the region can be easily traced. Fresh berries, tomatoes, cucumbers and courgettes as well as herbs - basil and mint, for example - literally give the dishes an authentic taste - and promote the local economy to boot.
But there’s no trend without a counter-trend: exotic flavours and spices are also still very much in vogue. Whether Asian, Latin American or Oriental: in summer, people are simply gripped by wanderlust. Spices such as turmeric, coriander, chilli and lemongrass are very popular, enabling guests to go on a trip around the world.
Refreshing drinks are also a must in summer. Instead of traditional soft drinks, for years guests have been turning increasingly to homemade lemonades, iced teas, smoothies or fruity cocktails. Special infusions with fresh fruits and herbs also offer to quench the thirst with a healthy alternative. Related to a rediscovery for traditional preparation methods, fermented drinks such as kombucha or kefir are also celebrating success right now. They are not only delicious, but also good for digestive health.
